The 10 Maintenance Tips That Actually Work

1. Clean Every Single Day (No Exceptions)

This is the #1 most important tip, and it's also the most ignored. Flour dust and dough residue get into everything — motors, belts, bearings, electrical connections. Over time, they harden and cause friction, overheating, and breakdowns.

Daily cleaning routine (15-20 minutes):

  • Wipe down all external surfaces with a damp cloth
  • Remove and wash mixing bowls, dough trays, and divider blades
  • Brush flour dust from motors, vents, and control panels (use a dry brush, NOT water)
  • Clean oven interior — remove crumbs and burnt residue
  • Check for any dough stuck in crevices or moving parts

2. Never Use Water on Electrical Parts

This should be obvious, but we see it all the time. Someone sprays water on the mixer motor to "clean it," and then the motor burns out. Water + electricity = expensive repair or fire hazard.

Rule: If it has a plug, a switch, or a wire, use a DRY cloth or a slightly damp cloth (wring out completely). Never spray water directly. For tough grease on electrical parts, use a dry brush first, then a cloth with a small amount of food-safe degreaser.

3. Lubricate Moving Parts Every Month

Moving parts need lubrication to reduce friction and wear. This includes:

  • Dough divider blades and pistons
  • Conveyor belts and rollers
  • Oven door hinges
  • Mixer bowl lift mechanisms
  • Any part that moves or rotates

Important: Use food-grade lubricant (NSF H1 rated) for any parts that come into contact with dough. Never use regular motor oil or WD-40 on food-contact surfaces — it's toxic and will contaminate your product.

4. Check Belts and Chains Every 3 Months

Belts and chains wear out over time. A loose belt can slip, causing inconsistent performance. A worn belt can break suddenly, causing downtime and possibly damaging other parts.

Every 3 months:

  • Check belt tension — should have 1-2 cm of play when pressed
  • Look for cracks, fraying, or glazing on belts
  • Check chain tension and lubrication
  • Look for unusual wear patterns (indicates misalignment)
  • Replace any belt that shows signs of wear — don't wait for it to break

5. Calibrate Oven Temperature Every 6 Months

Oven thermostats drift over time. An oven set to 200°C might actually be 180°C or 220°C. This causes inconsistent baking, burnt products, or undercooked bread. We've seen customers waste months trying to fix their recipe when the problem was just an uncalibrated oven.

How to calibrate:

  • Buy an oven thermometer ($10-$20 on Amazon or at a kitchen supply store)
  • Place it in the center of the oven

6. Don't Overload the Machine

This is another common mistake. A 20L mixer is designed for 12kg of flour. If you put 15kg, the motor works harder, runs hotter, and wears out faster. The same applies to dough dividers, ovens, and every other machine.

Rule: Never exceed 80% of the machine's rated capacity for daily use. If you need more capacity, buy a bigger machine — don't overload the small one. The extra $500 for a bigger machine is cheaper than $2,000 in repairs and downtime.

7. Listen for Unusual Noises

Your machines talk to you through sounds. A sudden change in noise is an early warning sign. Learn what your machines sound like when they're running normally, and investigate immediately if something sounds different.

Warning sounds and what they mean:

  • Squealing or high-pitched noise: Belt slipping or bearing going bad — fix immediately
  • Grinding or metal-on-metal: Lack of lubrication or worn gears — stop using, lubricate or repair
  • Rattling or vibrating: Loose parts or misalignment — tighten and check alignment
  • Clicking or popping: Electrical issue or worn relay — have an electrician check
  • Smell of burning: Motor overheating or electrical short — turn off immediately, investigate

8. Keep Spare Parts on Hand

The most common cause of extended downtime is waiting for spare parts. If a belt breaks and you have to order it from China, that's 2-4 weeks of downtime. If you have a spare belt in stock, you fix it in 30 minutes.

Essential spare parts to keep on hand:

  • Belts (all sizes used in your machines)
  • Thermostats and heating elements (for ovens)
  • Carbon brushes (for mixer motors)
  • Microswitches and sensors
