1. Dough Divider & Rounder Problems
Problem: Machine won't start, no power
Likely causes (in order of probability):
- Tripped circuit breaker — This is the #1 cause. Check the breaker panel first. If it tripped, reset it. If it trips again immediately, there's a short circuit — don't keep resetting it.
- Loose power plug — Vibration during shipping can loosen the plug. Unplug and reinsert firmly.
- Emergency stop button pressed — Check the red emergency stop button on the control panel. Twist it to release.
- Door safety switch not engaged — Many machines have a safety switch that prevents operation when the cover is open. Make sure all covers are properly closed.
- Blown fuse — Check the fuse in the control box. Replace with the same amperage rating.
Problem: Dough pieces are inconsistent weight
This is the most common complaint we get, and 90% of the time it's not a machine problem — it's a dough problem.
- Dough temperature too high — If dough is above 28°C, it's sticky and doesn't divide evenly. Cool your dough to 24-26°C before dividing.
- Dough too soft or too stiff — Adjust water absorption. Dough that's too soft sticks to the chamber; too stiff doesn't fill the chamber completely.
- Flour dust insufficient — Dust the dividing chamber with flour before each batch. This prevents sticking and ensures consistent weight.
- Machine not level — An unlevel machine causes uneven filling. Use a spirit level and adjust the feet.
- Worn dividing piston seal — If you've checked all the above and weight is still inconsistent, the piston seal may be worn. Contact us for a replacement seal (we include spare seals with every machine).
Problem: Machine makes unusual noise
- Grinding noise — Usually means gears need lubrication. Check gearbox oil level. Add food-grade grease if needed.
- Knocking noise — Could be a loose bolt or bearing. Stop the machine immediately and inspect. Tighten all bolts. If knocking continues, bearing may be failing.
- Squealing noise — Usually a belt that's too loose or too tight. Adjust belt tension. A properly tensioned belt should deflect about 1cm when pressed.
- Hissing noise — Could be an air leak (pneumatic machines). Check all air hose connections.
Problem: Rounding drum doesn't rotate
- Belt slipped off — Open the side cover and check the drive belt. Reinstall if slipped.
- Belt broken — Replace with spare belt (included with every machine).
- Motor not running — Check if motor is getting power. If motor hums but doesn't turn, capacitor may be faulty.
- Overload protection tripped — Some machines have a thermal overload on the motor. Wait 10 minutes and press the reset button on the motor.
2. Spiral Mixer Problems
Problem: Mixer won't start
- Bowl not in position — Most spiral mixers have a safety switch that prevents operation if the bowl isn't properly locked in place. Remove and reinsert the bowl, make sure it clicks into position.
- Safety guard not closed — The mixer won't run if the safety guard is open. Close it firmly.
- Timer set to zero — Check the timer setting. If it's at zero, the mixer won't start.
- Emergency stop pressed — Release the emergency stop button.
Problem: Dough climbs up the hook
This is a common problem, especially with high-hydration dough.
- Dough too wet — Reduce water absorption. Add flour gradually until dough pulls away from the bowl.
- Hook speed too high — Use low speed for the first 3-5 minutes, then switch to high speed.
- Bowl temperature too high — If the bowl is warm, dough sticks more. Use cold water in summer.
- Hook worn or damaged — Inspect the spiral hook. If it's bent or has deep scratches, replace it.
Problem: Mixer overheats and stops
- Overloaded — Don't exceed the rated capacity. A 50kg mixer should mix no more than 40kg of flour (dough weight is higher due to water).
- Continuous operation too long — Don't run the mixer continuously for more than 15 minutes. Let it rest for 5 minutes between batches.
- Ventilation blocked — Make sure there's at least 30cm of space around the motor for ventilation. Clean the motor fan regularly.
- Voltage too low — If your voltage is below 200V, the motor works harder and overheats. Install a voltage stabilizer.
Problem: Bowl doesn't rotate
- Bowl drive belt loose or broken — Check the belt under the machine. Adjust tension or replace.
- Bowl locking mechanism engaged — Make sure the bowl is not locked in the "remove" position.
- Gearbox problem — If belt is fine but bowl still doesn't turn, gearbox may have failed. Contact us for service.
3. Dough Sheeter Problems
Problem: Conveyor belt doesn't move
- Emergency stop pressed — Release it.
- Belt tension too loose — Adjust the tension screws at both ends of the conveyor. The belt should deflect about 2cm when pressed.
- Belt slipped off rollers — Reinstall the belt on the rollers. Make sure it's centered.
- Motor not running — Check power to the motor. Listen for humming sound.
Problem: Dough sticks to the belt
- Belt not floured — Dust the belt with flour before each use. Reapply as needed.
- Dough too warm — Keep dough at 20-24°C for best sheeting results.
- Belt dirty — Clean the belt with a damp cloth after each use. Don't use harsh chemicals.
- Humidity too high — In humid climates, use more flour and work in a well-ventilated area.
Problem: Uneven dough thickness
- Rollers not parallel — Adjust the roller gap on both sides equally. Use a feeler gauge to check both ends.
- Machine not level — Level the machine with adjustable feet.
- Rollers worn — If rollers have deep grooves or flat spots, they need to be replaced or reground.
- Dough not centered — Feed dough in the center of the belt, not off to one side.
Problem: Belt tracking off-center (rubs against side)
- Adjust tension screws — Turn the tension screw on the side the belt is rubbing against. Turn 1/4 turn at a time, run the belt, check again.
- Check rollers are parallel — If rollers are misaligned, belt will track to one side.
- Clean belt and rollers — Dough buildup on rollers can cause tracking issues.
4. Rotary Oven Problems
Problem: Oven won't heat up
- Power supply issue — Ovens use a lot of power. Check that the breaker is rated correctly (usually 32A or 40A for electric ovens). A 16A breaker will trip immediately.
- Temperature setting too low — Make sure the thermostat is set above room temperature.
- Heating element burned out — If one element burns out, the oven heats slowly or not at all. Check elements with a multimeter (should show continuity). Replace if burned out.
- Thermostat faulty — If elements are fine but oven doesn't heat, thermostat may be faulty. Contact us for replacement.
- Safety thermostat tripped — Most ovens have an over-temperature safety thermostat. If it tripped, press the reset button (usually on the back of the oven).
Problem: Oven temperature inaccurate
- Thermostat needs calibration — Use an oven thermometer to check actual temperature. If off by more than 10°C, calibrate the thermostat (refer to manual for calibration procedure).
- Temperature sensor dirty or misplaced — Clean the temperature sensor (usually a metal probe inside the oven). Make sure it's not touching the oven wall or heating element.
- Door seal leaking — A worn door seal lets heat escape. Check the seal for cracks or gaps. Replace if needed.
- Oven not preheated long enough — Rotary ovens need 15-20 minutes to preheat fully. Don't put bread in until the temperature stabilizes.
Problem: Trolley doesn't rotate
- Trolley not properly seated — Remove and reinsert the trolley. Make sure it's centered on the rotating base.
- Drive belt loose or broken — Check the belt under the oven. Adjust or replace.
- Motor faulty — If belt is fine but trolley still doesn't turn, motor may be faulty.
- Overloaded — Don't exceed the rated tray capacity. An overloaded trolley can damage the drive motor.
Problem: Uneven baking (some trays burn, others undercooked)
- Hot spots in oven — Every oven has slight hot spots. Rotate trays halfway through baking if needed.
- Trolley not rotating — If trolley doesn't rotate, trays near the heating element will burn. Check trolley rotation.
- Oven door opened too often — Every time you open the door, temperature drops 20-50°C. Minimize door openings during baking.
- Trays overloaded — Don't put too much dough on each tray. Leave space for air circulation.
5. Toast Moulder Problems
Problem: Dough doesn't roll properly
- Roller gap too wide or too narrow — Adjust the roller gap according to dough size. Start wider and gradually narrow.
- Dough too dry — Slightly moisten the dough surface with water or egg wash before moulding.
- Conveyor speed too fast — Reduce conveyor speed so dough has time to roll properly.
- Curtain not adjusted — Adjust the dough curtain height to match your dough size.
Problem: Dough sticks to rollers
- Rollers not floured — Dust rollers with flour before each batch.
- Dough too warm — Keep dough at 24-26°C.
- Rollers dirty — Clean rollers with a damp cloth after each use. Don't use sharp objects that could scratch the rollers.
6. General Electrical Problems
Problem: Machine trips breaker immediately
- Breaker too small — Check the machine's power rating and make sure breaker is rated correctly. A 1.6kW machine needs at least a 10A breaker; an 18kW oven needs 32A or 40A.
- Short circuit — Unplug the machine and check the power cord for damage. If cord is fine, there may be a short inside the machine. Contact a technician.
- Ground fault — If using a GFCI breaker, a small ground leak can trip it. Check for moisture in the control box.
Problem: Machine runs but has no power to certain functions
- Blown fuse — Check all fuses in the control box. Replace with same amperage rating.
- Loose wire — Vibration can loosen wire connections. Check all wire terminals and tighten if needed.
- Faulty relay or contactor — If a function doesn't work but power is reaching the control box, a relay or contactor may be faulty.
7. When to Call a Technician
Most problems you can fix yourself, but call a professional technician if:
