How the Hot Climate Affects Your Equipment
This is the #1 thing Middle East customers ask about. Here's what you need to know:
1. Dough Fermentation
In 45°C heat, dough ferments too fast. You need:
- Air-conditioned bakery (20-24°C is ideal)
- Proofer with cooling function (to maintain 28-32°C even when it's 45°C outside)
- Cold water or ice in the dough (to keep dough temperature below 26°C)
- Shorter fermentation times
2. Equipment Cooling
Mixers and ovens generate heat. In hot weather, they can overheat:
- Make sure the bakery has good ventilation
- Install exhaust fans near ovens
- Give mixers 10-minute breaks between batches in summer
- Keep electrical panels away from direct sunlight
3. Storage
Flour, yeast, and other ingredients need proper storage:
- Store flour in a cool, dry place (below 25°C)
- Keep yeast refrigerated (2-8°C)
- Use airtight containers to prevent humidity damage

3 Mistakes to Avoid When Buying Equipment for the Middle East
1. Not Upgrading the Proofer for Hot Climate
A standard proofer works fine in 25°C weather. But in 45°C summer heat, the proofer can't cool down enough. The dough over-ferments and the bread collapses. We strongly recommend upgrading to a proofer with extra cooling capacity for Middle East customers. The upgrade costs $200-$400 but saves you from ruined dough.
2. Ignoring Voltage and Plug Type
UAE and Qatar use Type G plugs (British standard). Saudi Arabia uses Type A/B/C/F. If your machine comes with the wrong plug, you'll need an adapter or rewiring. Always confirm the plug type before ordering. We can install the correct plug for your country before shipping at no extra cost.
3. Not Planning for After-Sales Service
If a machine breaks in Dubai or Riyadh, you need spare parts fast. A broken oven means lost revenue every day. Buy from a supplier who: 1) speaks English, 2) keeps spare parts in stock, 3) can ship to the Middle East within 3-5 days via DHL, 4) provides video support for troubleshooting.
