Production Line Workflow

Step 4: Dough Moulding (for Bread Loaves)

Step 5: Final Proofing

Load shaped dough onto baking trays and place in proofing cabinet. Set temperature 35-40°C and humidity 75-85%. Proof for 45-90 minutes depending on product size and dough type. For continuous production, stagger proofing so trays are ready for the oven at regular intervals. Use timer function to ensure consistent proofing.
Step 6: Baking
Equipment: Rotary rack oven (36-72 trays) or tunnel oven (continuous)
Transfer proofed dough (on racks) into rotary rack oven. Set baking temperature 180-220°C and time 15-30 minutes depending on product. Rotary rack oven rotates the rack for uniform heat distribution. For continuous high-volume production, tunnel ovens allow products to enter one end and exit baked from the other, with no loading/unloading downtime.
Step 7: Cooling & Packaging
