⚠️ Important: Size for Peak Production
Always size your equipment for your peak hour production, not average daily production. Add 20-30% buffer for growth. Under-sized equipment is the #1 cause of production bottlenecks in new bakeries.

Before buying equipment, calculate your peak production requirements:

Step 2: Peak hour production = (daily output ÷ operating hours) × 1.5
Example: (2,000 ÷ 8 hours) × 1.5 = 375 loaves/hour peak
Step 3: Dough weight per product × peak hourly units = dough kg/hour
Example: 375 × 500g = 187.5 kg dough/hour
Step 4: Add 20-30% buffer for growth → target 225-245 kg/hour

Buy NEW for: Oven, mixer, dough divider — where breakdown stops production and repair costs are high.

If buying used: Always inspect in person, test run the equipment, check for worn parts (belts, bearings, seals), and ask for maintenance records. Avoid used electrical/electronic components unless professionally inspected.
10 Common Equipment Buying Mistakes
- Under-sizing equipment — The #1 mistake. Always size for peak hour + 20-30% growth buffer. Under-sized equipment causes production bottlenecks and lost sales.
- Ignoring power requirements — Check voltage (220V/380V/415V), phase (single/three-phase), and wattage before buying. Many commercial ovens and mixers require three-phase power that your space may not have.
- Not measuring doorways and space — Measure all doorways, hallways, and the final equipment location before ordering. Equipment that doesn't fit through the door is a very expensive mistake.
- Buying based on price only — The cheapest equipment often costs more in repairs, downtime, and energy consumption over its lifetime. Consider total cost of ownership, not just purchase price.
- Skipping the test run — Always test equipment before paying (for used) or immediately upon delivery (for new). Document any issues with photos and video.
- Not planning for maintenance — Budget 2-5% of equipment cost annually for maintenance. Equipment that's not maintained breaks down 3-5x more often.
- Ignoring ventilation and exhaust — Ovens and proofers produce heat and moisture. Ensure your space has proper ventilation, exhaust hoods, and make-up air. This is often a code requirement.
- Not checking certifications — Ensure equipment has appropriate certifications for your country (CE for EU, ETL/UL for US, etc.). Non-certified equipment may not pass health inspections or void insurance.
